French Gastronomy sessions
Lear how to become a perfect french cook!
You will learn everything from shopping tips to specific techniques, including how to make subtile dressings. You will create various gastronomic compositions that can easily be reproduced at home thanks to the supplied recipes. During this practical workshop, you will take an active part in creating a menu that will be elaborated by our experienced chef. He will teach you culinary techniques and seasoning secrets that will help you to easily reproduce the menu back at home. A tasting session will be organised for your pleasure at the end of this class.

Discover typical Parisian markets with real Parisian's women! They will help you to find the best stands: cheese, meat, vegetables...They will give you all their tips and tell you about the French traditions.
After this nice walk, you will enjoy a nice "home made" meal in a typical haussmannian apartment with your new friends!

You will learn how to prepare from scratch 3 kinds of macarons using different classic fillings. The Chef will guide you through the recipes and share with you great tips in the art of making Macarons. On the day you will learn how to make several different flavours of macaron such as chocolate, raspberry, caramel salted butter or white chocolate with mint…All the macarons you make can be taken home with you.

Want to try out new and inventive ways to prepare food? Our molecular gastronomy class will inject some scientific joy into your home cooking. We will play with unconventional flavors and textures using our molecular lab tools to produce exciting dishes. You will be taught the techniques such as making spheres, gels, foams, and emulsifications and learn about the ingredients & tools used in this innovative food science. Cooking only with the highest quality ingredients and always using seasonal produce, you are in for a tasty molecular gastronomic adventure.

If filling your belly goes hand in hand with feeding your brain, join us for a cultural and culinary tour of Paris’s historic Les Halles area. Long known as the ‘Belly of Paris’ from the famous 1873 novel ‘Le Ventre de Paris’ by Émile Zola.
Take a tour in time where we retrace the mysteries and hidden culinary secrets of the oldest food market in Europe
During the tour we will visit the foundations of the France culinary scene, from the famous cooking equipment store, to some of the oldest French delicacies you can imagine : from Fromage, to Fois Gras, from Sweets to Meats !
Along the tour we will collect delicacies from each store that we will sample and enjoy with a glass of wine back at the school !

Poultry (Volaille) Technical Cooking Class

If you long for a cooking experience that is enjoyable, yet with a more of a rigorous element of technical application, then join us three hour Poultry (Volaille) Technical Cooking Class. While working through three important technical applications in working with Poultry, you will simultaneously be creating a tasty meal to enjoy!
In this class you will learn and apply the following techniques:
- How to debone your fowl
- How to make chicken stock, and its various applications
- How to make ‘paupiettes’ (stuffed chicken parcels)
Each individual will have their own ‘bird’ to master, and from start to finish will learn and apply the finer techniques to creating a classical French meal. Using the fruits of the labour, the group will construct and enjoy their menu.
Au menu :
- Soupe à l’oignon (using the chicken stock they have created)
- Paupiettes aux herbs et champignons (individual parcels of chicken stuffed with herbs and mushrooms, using the ‘paupiette’ technique)
- Purée de pommes de terre traditionelle (traditional mashed potatoes)
A Chocolate Fondant dessert will be prepared for the class with recipes and explanation provided
After all of your hard work, enjoy your meal here with us - with a glass of wine in hand !
